Insuring your family eats enough vegetables can sometimes be a challenge. However, if you are creative, and willing to try out new methods and recipes, it is possible.

Pump up your pasta sauce with vitamins by sneaking in pured vegetables. Mild flavored steamed vegetables such as zucchini or squash can be smashed with a fork, or ran through a food processor, then added to your pasta or pizza sauce without being noticed. Other vegetables, for example baby spinach, can be de-veined and chopped into a consistency similar to basil or oregano.

Another great option is adding vegetables to pizza. Get the kids involved and help them pick out what vegetables they might prefer as toppings. It may seem strange to them at first, but they might develop a healthy preference that will follow them throughout their lives.

For snacks, it-s great to have a ready-made, and attractive, vegetable tray. Raw carrots, celery, broccoli, and cauliflower, with a low calorie dip, are great for lunches when served aside a mini-sandwich tray. You can disguise vegetables in sandwiches as well. If you generally use iceberg lettuce in sandwiches, try arugula as a substitute, and add a few slices of cucumber.

Be creative, have fun, and soon your family will learn to love vegetables without even realizing it.
